Ingredients
  

  • 8 Medium Bay Scallops
  • SPG Seasoning Mix
  • ½ Cup Dry White Wine
  • 1 Oz. Minced Garlic
  • 2 Oz. Roasted Red Peppers
  • 2 Tbsp. Fresh Squeezed Lemon Juice
  • 2 Oz. Parmesan Cheese

Instructions
 

  • Coat both sides of the scallops with SPG seasoning mix.
  • Sear ½ lb of scallops in a hot pan with a touch of butter until golden brown and crispy.
  • Once seared, deglaze the pan with ½ cup of dry white wine, then add minced garlic and roasted red peppers. Allow the sauce to reduce slightly.
  • Season the sauce with 2 tbsp of freshly squeezed lemon juice.
  • Finally, generously top cooked scallops with shredded Parmesan cheese and a sprinkle of green onions.
